Gluten-Free Vegan Hamburger Helper
Like most 80's babies, Anthony and I grew up eating hamburger helper. To be honest, though I've never made it, we've always tried to eat as real as possible. Except for fish, a few times a month Anthony eats a gluten-free, vegetarian diet which, can be a real pain when you want a quick meal that's filling, inexpensive, and that the kids will eat. This week I played around with a gluten-free vegan pasta dish that just happened to taste like hamburger helper. This recipe is good fresh, as leftovers, and freezes well.

Call me "old," but I have a hard time focusing on shopping in stores that are very bright, have too many options, and really loud music, so I usually prefer to buy online. On Friday Kendall saw this unicorn thing in Forever21 and dragged me in.
Gluten-Free Starbucks inspired muffins
A few years ago, Anthony and I were lucky enough to get tickets to one of the last Tragically Hip concerts. The only catch was it was in Ottawa. My parents stayed the night to watch the kids and Anthony, and I headed out for a rare two days away. We stayed close to the Parliament Hill in the Lord Elgin Hotel. Located in the lobby or around the corner ( I can't remember) was a Starbucks. The morning after the concert we grabbed a coffee and a muffin. It was my first time having one of those blueberry cake like treasures.

Dreaming Dreams & Riding Horses
Over the last few years, I've been having this dream over and over again, I'm sitting on a porch swing reading, eating an apple, and a beautiful brown horse comes over my shoulder and takes the apple right out of my hand. Sundays, are usually spent catching up on laundry, tidying up bedrooms, and baking for the week ahead. School is almost finished for summer break, and I couldn't be happier. Happy Friday, Friends!
Friday nights are always Movie nights around our house. We get in our jammies, make some snacks, snuggle on the sofa and watch a movie. My kids favourite part is the food. If you're not careful, you can end up spending a lot of your weekly grocery budget on processed crappy food. Kids can still enjoy the traditional treats without the cost or added preservatives. Making these treats at home only adds to the fun family night.

This lemon delight is perfect for Mother's Day or any occasion this summer. It's simple and beautiful. I did make a glaze with icing sugar and lemon juice, but the organic icing sugar makes it off-white and almost invisible, so I sifted a small amount of icing sugar on time to add some colour.
