Gluten Free Honey Oat Muffins
Anthony has been gluten-free for almost one year, and I still have a hard time with baked goods. I was on the cookie kick for a while, but eventually, the kids were tired of "Daddy's cookies" and requested the ones I used to make. After the cookie phase, I went into brownies and blondies. Today I decided to experiment with muffins. I LOVE muffins, so I wanted these to taste like good old fashioned muffins! I went around the kitchen looking for ingredients following the basic baking principals I've learned over the past few years. I had my doubts, but for the heck of it, I threw together bananas, oats, applesauce, honey, walnuts, and Chocolate chips. To my surprise and everyone's delight, they turned out! Not only did they turn out but they are darn good if I do say so myself. When I have an idea, I honestly throw things in a bowl and mix. Typically it's recommended to mix wet ingredients and slowly incorporate the dry....I don't do that. In the future, I'll try to follow more traditional methods to make things easier for you guys. I'll write out the ingredients in the order I threw them in the bowl.
Ingredients:
2 ripe bananas mashed
1/2 cup applesauce
1/2 cup honey
1 egg
1 tsp vanilla
2 tsp baking powder
1 tsp banking soda
3 cups of gluten free quick oats
1 cup chopped walnuts
1/4 dark chocolate chips
Preheat oven to 375 degrees
Fill lined muffin containers three-quarters of the way with the mixture
Bake for 20-25mins or until a toothpick comes out clean.
