Zucchini Fritters
I'm trying my best to make sure I use up everything in our fridge. I bought a pack of Zucchini to make zucchini noodles last week and only ended up using half. This week when I went to make more, I noticed they were a bit squishy and had some spots that were going bad. Usually, I would have tossed them into the green bin, but I decided to shred them up and turn them into fritters for lunch. This was the first that I've made fritters, so I was a bit worried that they wouldn't turn out, especially since I didn't have any eggs on hand. I'm happy to report the flax egg did the trick. I tried them in the air fryer and a frying pan. Both ways were good, but I preferred the air fryer because they were brown and crispy but didn't have that browned taste, lol.

Instructions
- Grate Zucchini and remove the liquid by squeezing it through a clean tea towel or cheesecloth.
- Put the Zucchini and all the other ingredients into a bowl, and mix well.
- Scoop out 1/4 of a cup and flatten.
- Place into the air fryer at 350° for 15 minutes, turning over halfway. You can also use a lightly greased frying pan.
Notes :
I used Gluten-Free breadcrumbs (I linked the brand we love below)
Make sure you take out as much water from the grated Zucchini as possible.
