Healthy Gluten-Free Banana Nut Muffins

 

I am so excited to share this recipe with you! These muffins are healthy and so delicious. You won't even know they are gluten-free!

Perfecting the perfect rise, texture, and taste for a Gluten-Free muffin has taken me years. I've tried almost every GF all-purpose blend on the Canadian market. When it comes to baked goods, you want one without pea starch. I don't like using xanthan gum, so I try to avoid it whenever possible. I've found that corn starch acts as a suitable replacement—1tsp of cornstarch for every cup of GF flour.

Gluten-Free Banana Nut Muffins

Ingredients

Instructions

  1. Preheat over to 350°
  2. Line a muffin tin with 12 liners.
  3. Mix coconut oil, coconut sugar, vanilla, and maple syrup until light and fluffy.
  4. Add Bananas then add one egg at a time and mix until combined.
  5. In a separate bowl, sift together the flour, baking soda, cornstarch, and cinnamon.
  6. Slowly add the dry mixture to the wet and mix thoroughly.
  7. Fold in the walnuts.
  8. Fill the muffin liners 3/4 of the way and bake for 12 minutes or until a toothpick comes out clean.
