Healthy Gluten-Free Banana Nut Muffins
I am so excited to share this recipe with you! These muffins are healthy and so delicious. You won't even know they are gluten-free!
Perfecting the perfect rise, texture, and taste for a Gluten-Free muffin has taken me years. I've tried almost every GF all-purpose blend on the Canadian market. When it comes to baked goods, you want one without pea starch. I don't like using xanthan gum, so I try to avoid it whenever possible. I've found that corn starch acts as a suitable replacement—1tsp of cornstarch for every cup of GF flour.

Gluten-Free Banana Nut Muffins

- Preheat over to 350°
- Line a muffin tin with 12 liners.
- Mix coconut oil, coconut sugar, vanilla, and maple syrup until light and fluffy.
- Add Bananas then add one egg at a time and mix until combined.
- In a separate bowl, sift together the flour, baking soda, cornstarch, and cinnamon.
- Slowly add the dry mixture to the wet and mix thoroughly.
- Fold in the walnuts.
- Fill the muffin liners 3/4 of the way and bake for 12 minutes or until a toothpick comes out clean.
