Vegan Lime Pie
Summer is in full swing, and we are enjoying every minute. I love making easy desserts that don't have a lot of sugar. The quick healthy and easy Gluten-Free Vegan Lime pie is Guaranteed to please everyone!

Vegan Lime Pie

Ingredients:
Crust
- 1 Box GF Graham Crumbs
- 5 TBS Coconut Oil (Melted)
Lime Filling
- 1 Can Coconut Milk (400ml)
- 1/3 cup lime juice
- 5 TBS Cornstarch
- 1/3 cup Maple Syrup
- 1 TSP Vanilla
- 1 TSP Lime Zest
Instructions:
- Pre-Heat oven to 350
- Spray 8" pie plate with coconut oil
- Mix graham crumbs with melted coconut oil until it's a crumbly texture.
- Pour into the prepared pie plate and use a cup to firmly press the crust into place and bake for 10 - 15 mins.
- Mix the lime juice with the cornstarch.
- Heat the coconut milk until it boils slightly, then add the lime just and corn starch mixture.
- Add the vanilla and maple syrup, constantly whisking for about five minutes. Then switch to a spatula slowly stirring until the mixture is thick and creamy. Remover from heat and let sit for about ten minutes.
- Pour the coconut milk over the crust and refrigerate for 3-4 hours or until completely set.
- Garnish with fresh limes and coconut whip cream.
