Gluten-Free Vegan Chocolate Chip Cookies
I love baking cookies almost as much as I love eating them. After I had Bennett, I started looking at food differently. It became less about eating, whatever, whenever, for the sake of eating and more about eating good food that keeps my body and mind healthy. I'm a firm believer in balance and living an 85/15 lifestyle. 85% whole good food and 15% optional. Cookies, even though these are healthy, fall into that 15%. I don't feel guilty or punish myself about food choices, If I want a treat, I'll eat a treat, but I prefer it to be healthy-ish and not filled with things that will make my body feel poorly. I've replaced almost all my baking with maple syrup or honey, and not one person can tell the difference! I'm so happy with the way these cookies turned out. They are light, sweet, and taste, just like the cookies I grew up eating without butter, eggs, and refined sugar.
Gluten-Free Vegan Chocolate Chip Cookies
Ingredients:
- 1/3 Cup Refined Coconut Oil
- 1/3 Cup Maple Syrup
- 2 Tsp Vanilla
- 2 Tbsp Almond Milk
- 1 Cup Oat Flour (Oats pulsed in the food processer until they are a flour-like texture, I keep mine oaty.
- 1 Cup Almond Flour
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- 1/3 Cup Vegan Chocolate Chips
Instructions:
- Pre-heat over to 350
- Line a cookie sheet with parchment paper.
- With a hand mixer mix coconut oil and maple syrup until light and fluffy. Add vanilla and almond milk.
- Combine the flours, baking soda, and baking powder and add to the mixture. Fold in chocolate chips.
- Drop by the tablespoon onto the cookie sheet and lightly press down.
- Bake for 8 minutes. Let the cookies cool before you move them.
