VEGAN POTATO SOUP
I love making soup all year round for so many reasons. Not only is it super easy, but it's a great way to use up vegetables that are starting to soften and turn. Soup can be filling, and it's a healthy way to eat a variety of vegetables. Soups are also a creative way to get your kiddos to eat more veggies. Our kids love to dip a grilled cheese in their soups.
Vegan Potato Soup

Ingredients
- 1 tablespoon avocado oil
- 1 whole onion chopped
- 2 cloves of garlic
- 10 potatoes peeled and chopped
- 2 large carrots peeled and chopped
- 7 cups of water
- One can of full-fat coconut milk
Instructions
- Saute the onions and garlic in the avocado oil for 10 minutes.
- Add potatoes, and carrots, stir and simmer for 5-10 minutes, add water and bring to a boil, simmer for 30 minutes.
- once the vegetables are soft, use an immersion blender to blend.
- Add coconut milk and stir until combined.

Substitutions:
Avocado oil for coconut oil or vegan butter.
Vegetable broth for water.
