Gluten Free Oatmeal Chocolate Chip Cookies

My favourite Gluten Free cookie is oatmeal chocolate chip! These cookies are nut-free, vegan, healthy, and take only a few minutes to make.

Ingredients:

  • 1 cup vegan butter

  • 1/2 cup brown sugar or coconut sugar

  • 1 flax egg ( 1 TBS flax meal with 3 TBS water, mix and let sit for 5 mins)

  • 1 tsp vanilla

  • 1.5 cup old fashioned oats

  • 1.5 cup oat flour (oats in the blender until flour consistency)

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • 1/2 cup dark chocolate chips

Directions:

  1. Preheat oven to 350 degrees, Line two baking sheets with parchment paper.

  2. In a large bowl cream together vegan butter and sugar (about 5 mins) add flax Egg & Vanilla, mix until combined. Add dry ingredients and mix until the cookie dough is formed. Fold in chocolate chip.

  3. Drop by the tablespoon on the prepared cookie sheet and flatten slightly with the bottom or a glass or measuring cup.

  4. Bake at 350 degrees for 10-12 mins.

  5. Let cool for about 5 minutes and then transfer to a wire rack. Once completely cooled, store in an airtight container for up to 7 days.
