Super Bowl Sunday

Happy Sunday, Friends! I'll admit we aren't much of a sports family, and we don't usually watch the Super Bowl. When I was a kid we did, maybe that's why I don't watch it now, My ears are still ringing from my Mom screaming at the Tv. To be honest, I am just excited about "This Is Us."

Even though we don't partake in the viewing of the game, I still make Super Bowl style food.

Vegan Chili

(Without using a crockpot ... LOL)

INGREDIENTS:

3 Tbsp olive oil

1 large onion, peeled and diced

2 large carrots, peeled and diced

1 stalk celery, diced

1 and a half large green pepper, diced

1/2 - 1  jalapeno, seeded and diced

5 cloves of garlic, minced

salt and pepper, to taste

2 Tbsp chili powder

1 tsp paprika

2 tsp cumin

2 tsp dried oregano

1 28-oz can tomatoes with juices

6 cup vegetable stock

1 28-oz can red kidney beans, drained and rinsed

1 cup corn (optional, sometimes I don't bother) 

 

DIRECTIONS:

1. Heat oil in a deep pot, or dutch oven. Add onions, carrots, celery, green pepper, jalapeno, and garlic. Season cook until vegetables are soft and the onions are translucent.

2. Add salt, pepper, and spices and cook for a few minutes stirring consistently.

3. Add canned tomatoes and stock. Bring to a boil and reduce heat to medium-low and cook for 45 minutes, stirring occasionally.

4. Add kidney beans and corn, continue cooking for 15 minutes longer.
 
Serve with fresh cilantro, cheddar cheese, sour cream, etc. Avoid adding the topping to keep the dish vegan.
