GF VEGAN CHEX MIX
Growing up, my best friends Mum used to make the most amazing Chex mix. I loved it so much that she even made if for our wedding rehearsal dinner. Some of my very best memories were made at their house. The nights usually started with Chex mix, Pepsi (RC Cola) Rum, and ended with prank phone calls, midnight baths, and a million laughs. The other day I decided for the very first time I was going to make it. I googled a few recipes, and they all called for Worcestershire sauce; I'll eat it if I don't know any better, but I won't use it myself. Umm, anchovies in a sealed bottled with just about the longest shelf life of any condiment, no thanks. I quickly realized the traditional recipes weren't going to do, so I started with a little this and that, and it ended up turning out so well. We all loved it. I'm going to add fish crackers and take out nuts so I can send it to school with the kids next week. If the mixture starts to look a little thick when you add the nutritional yeast, add a bit more of the vegan butter. I added a bit more salt to the top when they came out of the oven. GF Vegan Chex Mix
Ingredients:
- 4 cups gluten-free Chex
- 4 cups gluten-free cheerios
- 2 cups roasted peanuts
- 3 cups gluten-free pretzels
- 1/2 cup vegan butter
- 1 tsp sea salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 5 tbs nutritional yeast
Instructions:
- Pre-heat over to 225 degrees.
- In a big bowl, mix the peanuts, Chex, cheerios, and pretzels, set aside.
- In a medium saucepan, melt the butter or coconut oil of choice, add the spices, salt, and nutritional yeast. Whisk until everything is combined.
- Pour the mixture over top of the cereals and mix evenly.
- Spread on a large cookie sheet and bake for 2 hours, turning the pan halfway through.
