Flourish Protein Cookies

Mornings around here are hectic! Lunches need to be made, the kids need to find their uniforms, and of course, they need to eat breakfast. Pancakes are Morgan's favourite, Eggs and toast are Kendalls, they rarely agree on anything. Except! Cookies for breakfast, yup that's right, cookies.

Flourish is a Canadian company that makes pancake mixes using quality ingredients like Non-GMO whole wheat flour. The buttermilk mix that I used in this recipe has 23g of protein and 7g of fiber per serving (1/2 cup)

These cookies are so easy to make!

Ingredients:

  • 2 cups of Flourish pancake mix (any combination will do)

  • 1 cup of butter or coconut oil

  • 1/2 cup coconut sugar (ground in a blender or food processor )

  • 1 egg

Directions:

  1. Preheat over to 375°

  2. Cream together butter and sugar.

  3. Stir in the egg.

  4. Add Flourish Pancake Mix and stir until a cookie dough is formed.

  5. Drop by the tablespoon on a cookie sheet and bake for 8 mins.

Making pancakes is even easier, just add water! You won't believe that something this healthy without any added sugar is this good!

Baking with a pre-made flour blend like Flourish Pancakes is excellent when you're baking with kids, letting older children cook on their own, and when you're traveling. When we are away in Florida, I don't want to lug flour, baking soda, baking powder, etc. back to the condo; a mix is space efficient and cost-effective.
