Gluten-Free Peanut Butter Oat Bars

During the holidays we have a lot of visitors! Often they bring us some yummy treats to enjoy during their visit. Anthony has been on a Gluten-Free diet for the last 3 years. Sometimes, it means he misses out on those yummy holiday treats, so I like to have baked goods on hand for him. His Favourite are these Gluten-Free Peanut Butter Oat Bars. They are so good you can’t even tell they are Gluten-Free.




Ingredients:

  • 1.5 cups old fashioned oats

  • 1.5 cups Bob’s Red Mill 1 for 1 Gluten-Free Flour

  • ½ cup plus ¼ cup Coconut Oil

  • ¼ cup agave syrup

  • 1/3 cup coconut sugar

  • 1 teaspoon vanilla

  • ¼ teaspoon of sea salt

  • 1 cup natural peanut butter

  • 2 tablespoons maple syrup or honey

  • 1/2 cup chocolate chips

Directions:

  1. Preheat the oven to 350F and grease and line a 9×9” square baking pan with parchment paper, leaving extra hanging over the edges.

  2. Combine the oats, flour, coconut, ½ cup coconut oil, agave syrup, coconut sugar, vanilla and sea salt in a food processor. Process until the mixture crumbles together (think apple crumble)

  3. Reserve 1/2 cup of the base mixture and evenly press the rest of the mixture into
    the bottom of the prepared pan. Bake for 10 minutes and set aside.

  4. In a medium bowl combine the peanut butter, maple syrup or honey, and ¼ cup coconut
    and beat with an electric mixer until smooth and creamy. Spread the peanut butter mixture on top of the baked prepared crust.

  5. Mix the remaining crumb mixture with the chocolate chips and evenly sprinkle on top.

  6. Bake until the edges are a light golden brown, 20-25 minutes and set aside to cool. To cut the bars lift the parchment paper out of the pan and set onto a cutting board.

Makes 12-16 bars depending on how you cut them.
