Quick & Easy Peanut Butter Cookies
Last night was Date night for Anthony and I, which meant my parents were coming over to have dinner with the kids. My Mom likes to bring her food over. She doesn't trust I'll have everything she needs which is probably the case. When she was going over the menu, she mentioned peanut butter cookies, and immediately Anthony's sad expression popped into my head, he's been gluten-free for the past 2 years. He tries to eat as healthy as possible and stays away from sugar for the most part, since maple syrup is on his list of acceptable sweeteners, I thought I would give it a shot. I was skeptical at first, but after one bite I knew he was going to love them.
Not only are these one of the healthiest cookies I've ever made they are the easiest!
Ingredients:
1 cup All natural peanut butter
1/2 cup Maple Syrup
1 Egg
Directions:
Preheat oven to 325 Degrees Fahrenheit
Add all the ingredients into a bowl and mix with a hand mixer on medium speed until light and fluffy.
Drop the dough by the tablespoon onto a prepared cookie sheet.
Bake for 12-15 minutes
