Oatmeal Chocolate Chip Muffins

Good Morning Friends,

The kids and I are enjoying some warm muffins for breakfast this morning and I thought it would be nice to share the recipe with you. I've taken a few things from different recipes to make these the best muffins ever. 

Here's what you need:

- 1/2 cup of room temperature butter

- 1/2 cup of brown sugar

- 1 egg

- 1/2 - 3/4 of unsweetened apple sauce

- 1 cup of flour (I used all purpose this time)

- 1 Cup of oats  

- 1 tsp baking powder 

- 1/2 tsp baking soda

- 1 tsp of cinnamon (optional)

- 1/2-1 cup of semisweet chocolate chips 

- cooking spray ( I use coconut ) 

 

Directions :

Preheat oven to 350 degrees

spray a muffin pan with coconut oil

 Combine butter and sugar until it is light and creamy 

Add the egg and mix until blended 

Fold in the Apple sauce 

 Add flour , baking soda, baking powder, and cinnamon 

 Stir in the oats and the chocolate chips together

Evenly divide the batter into the muffin tin using an ice-cream scoop

 Bake for 20 - 25 mins, and let sit for at least 10 before you take them out of the pan. 

I usually make a lot of healthy substitutions when i'm baking but once in a while I enjoy the sugary goodness of old fashion baking.
