Banana Bread
Good Morning Friends!
Happy Friday :)
I love banana bread , but I don't love when it's a heavy and doughy feeling. I started making this almond base banana bread 2 years ago and its been a huge hit in our family. Almonds are rich in fibre , packed with protein, and contain healthy fats.
This bread is hearty, moist, and super yummy. The perfect breakfast on the go.
Ingredients
2 medium ripe bananas
1 tsp pure vanilla extract
1 egg
3 Tbsp coconut oil, melted and at room temperature
1/4 cup organic cane sugar
1/4 cup packed organic brown sugar
2 Tbsp honey
3.5 tsp baking powder
1/2 tsp ground cinnamon
3/4 cup almond or dairy milk
1 1/4 cup almond meal
1 1/4 cup flour
1 1/4 cup quick oats
Instructions
Preheat oven to 350 degrees .
Line a loaf pan with parchment paper.
Mash bananas in a large bowl and add the Vanilla, egg, oil, sugars, honey, cinnamon, and milk, whisk with a fork until the ingredients are well combined .
Add flour and stir until smooth.
Fold in the oats.
Pour into the loaf pan and smooth it out.
Bake in the oven for 1 hour and 20 mins (depending on your oven) Test with a toothpick. It should come out nice and clean and the top should be a nice golden brown colour.
let the bread cool in the loaf pan for about 30 mins before you cut otherwise it will fall apart. Trust me this part is the hardest!
Thanks for reading! Give it a try and let me know what you think .
