Garden Vegetable Tomato Sauce

Our very first garden was a massive success on so many levels — Pride, convenience, and yummy vegetables free of chemicals. The kids love checking to see what's ready to be picked.

Most of our tomatoes were ready to be picked around the same time, so we decided to make our easy garden vegetable tomato sauce.

Ingredients:

3 cups or more of garden tomatoes

3 carrots (I use carrots instead of sugar)

1 whole white onion

2 tbs olive oil

1 tsp sea salt

1 tsp oregano

1 cup of water or stock


Directions:

Preheat oven to 400 degrees.

Chop tomatoes, onions, and carrots into quarters.

Spread on a roasting pan and coat in olive oil, salt, and oregano.

Roast for 1 hour, then let sit for 20 mins.

Transfer to a blender, add the water and blend until smooth and creamy.

Add the basil and pulse if you like a few pieces or blend until smooth.

Sometimes I thin out the sauce with stock or pasta water when i’m serving.

Keep in the fridge for up to a week or freeze for 6 months.
