Oatmeal Bowl

I'm terrible at eating breakfast, I know it's the most important meal of the day, but after I drop the kids off, I'm so eager to get to work that time just gets away from me. Before I know it, it's 12 pm, and I'm super hungry, so I grab toast or a granola bar. Maybe 30 mins later I'm hungry again, so I spend my day snacking, by the time dinner comes I'm full so I barely eat and then around 8 pm I'm hungry again but too tired to make anything proper. I'll grab some chips or some slices of cheese. I've gained a few pounds, my energy is low, and I'm not sleeping well. This week is the week I make the change to get back into my healthy pre-Christmas lifestyle.

My morning go to has been an easy oatmeal bowl, loaded with protein, healthy fats, and a tiny bit of sweetness to balance it all out.

I use quick oats and organic non-sweetened almond milk

Bring 3 cups of almond milk to a light boil.
Add in 1 1/2 cups of quick cooking oats, add a tight fitting lid and lower to simmer.
Simmer for about 2-3 mins, occasionally stirring until you have the consistency you like.

Serve hot, and top with whatever you like. I add almond slivers, berries, maple syrup, and hemp seeds. This keeps me nice and full until lunchtime.

What do you eat for breakfast? I'm sure I'll get tired of oatmeal soon...
